Hard Cheeses
WSU - Cougar Gold (White Cheddar) from Pullman, WA
Created at the WSU Creamery, this aged natural cheddar is more flavorful, sharper and drier than your usual cheddar. The texture is also different from most cheddars, more crumbly, largely due to its being aged for a year.

Beechers - Flagship (White Cheddar) from the Pike Place Market, Seattle, WA
Beecher’s cheese is handmade on site at the Pike Place Market. It has no additives or preservatives, it’s pure, simple food. Flagship is a semi-hard cow’s milk cheese with a uniquely robust, nutty flavor. It is carefully aged for 15 months under the watchful eye of the cheesemaker to fully develop its complex flavor and ever-so-slight crumble.

Mt. Townsend - New Moon (Washington Jack) from Port Townsend, WA
Slightly sweet and buttery, New Moon is a rich and highly versatile cheese with the characteristic texture and flavor of a jack and subtle hints of butterscotch. Mt. Townsend Creamery, the North Olympic Peninsula’s first artisan creamery, sources only the best local milk from the region to craft fine artisan cheeses.

Soft Cheeses
Mt. Townsend - Cirrus (Pacific Northwest Camembert) from Port Townsend, WA
Cirrus is a Pacific Northwest variation on the traditional French camembert. A rich, buttery cow's milk double creme soft-ripened cheese, it ripens from the outside in developing an increasingly creamy texture with age. Hand-made in small batches using fresh milk and traditional techniques by Mt. Townsend Creamery.

Port Madison - Chèvre with Herbs dé Provence (Goat Chèvre) from Bainbridge Island, WA
Chèvre is a fresh, delicious soft cheese, made from the milk of the well-cared-for, stress-free Nubian goats at the Port Madison Goat Farm and Dairy on Bainbridge Island (stress can affect the flavor of the goat's milk, which is why Port Madison cheese is so wonderful). Chèvre tends to be more complex than cow's milk cheese.

Natural rind alpine-style cheese. Handwashed and aged to enhance it’s nutty, earthy characteristics. by Mt. Townsend Creamery.

Rogue Creamery - Oregon Blue from Central Point, OR
This raw milk blue cheese is cave-aged at least 90 days to create a semi-soft smooth textured cheese which has a subtle flavor.

A firm, milder gorogonzola style blue. Pairs well with Battle Pont Red, Tara Rouge, Cuvee,and Semillon.
